Hey there! It's been a while since I've posted a blog for ya but after great demand for the recipe for this yummy meal I posted on Instagram I figured I should probably get this up ASAP.
This is my 6 ingredient simple, healthy, fresh, and delicious recipe for Chickpea Avocado Wraps. So many of my clients struggle with quick and easy meal ideas and this one is sure to make your life a lot easier.
Packed full of satiating healthy fats from the avocado, fiber packed chickpeas, also known as garbanzo beans, and cleansing parsley and lemon.
Avocados are one my of my favorite foods and so versatile. You can add them to smoothies for a creamy texture or to savory dishes alike. Avocados have been shown to have significant antioxidant and anti-inflammatory properties.
Chickpeas (garbonzo beans) Are also very versatile as they have a very mild flavor and texture. Best known for their use in hummus, chickpeas are great in salads, soups, or mixed with sweet potatoes. They are a great source of fiber, iron, b6, and magnesium and a great choice of carbohydrate and vegetarian protein.
Parsley was one of the first things I grew in a garden as a child. I remember pulling it straight from the ground and eating the curly little tufts of green right from the stem. Parsley is full of chlorophyll which is an excellent blood purifier and builder. Parsley is rich in vitamin C which helps the body better absorb iron to help prevent anemia.
Lemon, oh the mighty lemon! I put lemon on EVERYTHING! I love lemon! Lemon is incredibly alkalizing to the body and in this dish provides the right balance of acid to even out the mellow flavors of the avocado and chickpea and helps to give this dish a refreshing punch.
Butter Lettuce makes the perfect serving vessel for this amazing mix. Grown in the shape of a dainty little cup it is an easy to fill, wrap, and eat on the go. It has a mild flavor and help keep the body hydrated.
Chickpea Avocado Wraps:
- 1 BPA free can organic non GMO chickpeas drained and rinsed
- 1 avocado sliced in small cubes
- Juice of 1/2-1 small lemon (depending on taste preference, I like mine lemony!)
- Large handful of fresh chopped curly leaf parsley
- Dash of pink salt
Toss all ingredients in a bowl until thoroughly combined then spoon into lettuce cups and enjoy!
