Ok...... so on my Facebook post the other day I shared a pic and mentioned that I was playing around with a new muffin recipe and if it turned out good I would be posting a blog with the recipe. Well it turned out pretty darn good and even my older son has been eating them (the rest of the family prejudges if they are too healthy and wont even taste them...bummer). I have been so into using as many superfoods as possible in my meals throughout the day I wanted to make a superfood muffing by adding in all my favorites. So get ready to meet the new "Superfood Power Muffins"
These muffins are chock full of nutritional goodness and very filling. I have been eating them for breakfast every morning and they keep me full for a couple hours. A good source of both healthy fats and protein it makes for a great pre or post workout snack or a grab and go meal replacement for those of us that prefer small meals several times a day.
Nutritional Powerhouses:
Dried Gogi Berries:
- The most nutritional fruit on earth
- Contains all of the essential amino acids
- Natural ani-fungal, anti-bacterial, anti-viral properties
- Loaded with vitamin C
- Contains 15 times the amount of zinc, calcium, and selenium than spinach
- Powerful antioxidant
Almond Flour:
- High in vegetarian source protein
- High in monounsaturated healthy fats
- Low carbohydrate

Recipe:
2 1/2 Cups almond flour or almond meal
3/4 tsp Baking soda
1/2 tsp Sea salt
3 Eggs
1/3 cup mashed banana, unsweetened applesauce, or pumpkin puree (i used banana in this batch)
2 TBSP Coconut manna (coconut butter)
2 TBSP Raw Honey
2 TBSP Melted coconut oil
1 TSP Apple cider vinegar
2 TBSP Hemp seeds
2 TBSP Chia seeds
Handful of dried gogi berries
Handful of Raw cacao nibs
Directions:
- Preheat oven to 350 degrees
- Line muffin tin with paper cupcake liners or grease with coconut oil
- In a large bowl whisk together dry ingredients
- In a small bowl whisk together all wet ingredients then stir or fold in with dry ingredients until fully blended together
- Evenly distribute between muffin pan
- Bake for 14-18 minutes or until top golden brown and inside no longer wet
- Remove from muffin tin and let cool on bakers rack
