With Thanksgiving in just a few short days I thought I would post a couple blogs for healthy meal swaps for the many that have been asking me what I eat on Thanksgiving and what they can do to stick to their healthy lifestyle plan and still enjoy the holiday.
This recipe is recycled from one of my older blog posts all about cauliflower but this makes such a perfect healthy Thanksgiving dish I thought I would share it again.
I actually make this recipe for my family about once a week and it never fails. My family eats it up and forgets that it's not even real mashed potatoes nor do they care because it is just as tasty!
There are so many variations you can do with this dish! You can add some crumbled uncured bacon to it or bake in the oven and top with nutritional yeast flakes for a cheesy taste then garnish with some chopped green onion or scallions.
It's all so good and I guarantee your guests will love it! This gives you a mashed potato satisfaction with a healthy dose of veggies instead of a starch laden gut sticking plateful of real potatoes.
Simple Garlic Mashed Cauliflower:
1 head cauliflower
3 TBSP grass fed butter or ghee
6 cloves garlic
Sea Salt
Pepper
Smoked Paprika (optional)
Crumbled bacon (optional)
Chopped green onion or scallions (optional)
Cut cauliflower into florets and add to steamer along with peeled whole garlic cloves. Steam until soft and you can easily insert a fork. Place steamed cauliflower and garlic in food processor or high powered blender and start to puree adding in 1 TBSP of butter or ghee at a time while processor or blender running. When creamy scoop out into large bowl and season with sea salt and pepper and smoked paprika and top with any optional fixings and serve.
